Have you ever heard of the Momofuku Milk Bar?  It’s an incredible bakery in New York City.  But this isn’t just any bakery where you can get your kids a chocolate chip cookie.  This is a big kid’s bakery.  Serving all the things you never knew you needed in your life.  Crack pie.  Cereal milk.  Cake truffles.  I’m serious.  Look it up and drool be amazed.  If you’re ever in the area, this is a must-see spot.  Unfortunately, I don’t live in NYC, and don’t make the trip up there as much as I’d like to.

So something had to be done.

These Funfetti cupcakes were just the trick.  They’re just like the B’Day truffles, but in cupcake form.  Eat these cupcakes on their own, or frost them with this delicate and delicious vanilla buttercream.

Funfetti Cupcakes with Vanilla Buttercream
(Makes 12 cupcakes)

For the cupcakes:

1/2 cup unsalted butter, at room temperature
1 cup sugar
2 eggs
1 tablespoon vanilla extract
1 1/2 cups flour
1 teaspoon baking powder
1/3 cup milk
1/3 cup sprinkles

Preheat oven to 350 F.  Line your cupcake pan with liners.

In the bowl of an electric mixer, cream the butter and sugar until fluffy, about 3 minutes.  Add the eggs and vanilla and mix until combined.

In another bowl, combine the dry ingredients.  Add half of the dry ingredients to the wet ingredients, mixing until just combined.  Add the remaining dry ingredients, being sure not to over mix.  Add the milk and mix until well incorporated.  Lastly, fold in the sprinkles.

Using an ice cream scoop or a 1/4 cup scoop, pour the batter into your lined cupcake pan.  The tins should be about 2/3 of the way full.  Bake for 18-20 minutes.  In the meantime, make the buttercream, and frost once cooled.

For the buttercream:

1 stick of unsalted butter, at room temperature
1 1/4 cups powdered sugar
1 tablespoon vanilla extract
Sprinkles, for garnish

Cream the butter in the bowl of an electric mixer until smooth and creamy.  Slowly add the powdered sugar.  Add the vanilla, and then beat for about 2-3 minutes.  Be sure to scrape the sides of the bowl to ensure that everything is well mixed.  Frost the cupcakes however you like, and top with sprinkles for garnish.
